This was my first "official" Mother's Day since we found Matt, suffice it to say, I was overjoyed that he called me and wished me a Happy Mother's Day. We don't hear from him very often these days as he's so busy training and will be leaving in about 2 weeks for Iraq, so getting to hear his voice made our day, that's for sure!
The rest of the day Bruce and I just relaxed, we made chili (it was still very cool here, lol) and had a nice day at home after church and then played around taking these fun self-portraits - I hate it that I've gained back a few pounds but am working on losing them - AGAIN! Bruce is so supportive and loving and I couldn't ask for a more wonderful husband!


I just noticed that it seems I take a lot of pictures in this top - hmmmm......how funny.....oh well....I'll plan better for our next photo session!
I woke up to rainy, cool weather this morning, at least there was no snow, lol! I've missed walking in the water at the rec center this week, just wasn't up to it but today I've got plenty to do - first, I'm baking up a couple of dozen of the fab Banana Walnut Muffins (recipe below) for our Church's Ladies Group Bake Sale this weekend; then, I fell in love with a neat handmade folded card that Linda at Faith Based Pages posted a link to at the Yahoo Group and am going to give it a try and then get started on my June DT projects for FBP kit club. I'll be sure to post the card here in my gallery when I get one done!
I still have about 15 of the mini tag scripture albums for the ladies I attended the "Breaking Free" Bible Study with:

I overwhelmed myself with these but will get them made - slowly but surely - they take about 5 hours each, not hard to make just time consuming! The ladies loved them and I cannot wait to get them all finished!

BANANA WALNUT MUFFINS
3-1/2 cups Spelt flour
1 cup pure maple syrup
2 tsp. baking soda
1/2 tsp. vanilla extract
1 tsp. baking powder
1/4 cup vegetable oil
1 egg
1 cup finely chopped walnuts
3 cups mashed ripe bananas
Preheat oven to 375 degrees. Line muffin tins with paper liners. In large bowl, mix together flour, baking soda and baking powder. In another bowl, beat egg. Add bananas, maple syrup, vanilla extract, oil and walnuts to egg. Mix well. Fold wet mixture into flour mixture and mix until completely combined. Spoon batter into tins and bake 20-25 minutes. Makes 24 muffins.
