Rhubarb Berry Jam...soooo easy

Ingredients

  • 8 cups chopped fresh rhubarb- I like it chopped small...and used frozen.
  • 3 cups white sugar (I reduced mine to 2 1/2 and it was plenty sweet)
  • 1 (21 ounce) can blueberry pie filling
  • 1 (3 ounce) package strawberry flavored gelatin
  • 1 (3 ounce) package raspberry flavored gelatin mix

Directions

  1. Combine the rhubarb, sugar and blueberry pie filling in a large pot. Bring to a rolling boil over medium-high heat, and boil for 10 minutes longer. (I cooked mine until it was tender...about 20 minutes.  Stir in dry gelatin mix until dissolved. Transfer to sterile jars or freezer tubs, and cool. Freeze any jam you don't intend to use right away.
yeilds about 4 pints
This is so incredibly easy to 'throw' together!  It sets up in about 24 hours and is awesome!  Everyone loves it and can't quite figure out the unique flavors.  This makes great gifts for holidays and as teacher appreciation gifts!

sounds so yummy, can't get strawberry or raspberry flavored gelatin mix in Australia I'm prettty sure about that, so if I can't get it through customs coming home from my trip there next week I will have to find an alternative.
