Hunter’s Chili
6-8 servings
1 pound Dried kidney beans
½ teaspoon baking soda
1 tablespoon salt
2 pounds Meat (ground or small cubes)
¼ cup shortening
1 large onion
4-6 tablespoons chili powder
2 tablespoons flour
3 garlic, cloves (through press)
4 teaspoons crumbled dried oregano
2 teaspoons ground cumin
¾ teaspoon ground sage

Soak beans overnight in water. In the morning add baking soda and bring to a boil. Boil for 10 minutes. Drain and rinse.

Cover beans with water, add salt and bring to a boil.

Meanwhile, trim all fat and tendons from meat and cut into small cubes. Brown in shortening, then add to the beans.

Cook onions in remaining shortening until golden brown, stirring occasionally. Add chili powder and flour and mix. Then add to beans and meat.

Rinse pan with a little water, stirring to remove all particles and add to chili.

Add remaining ingredients (garlic, oregano, cumin and sage) and cover.

Simmer 4 hours, stirring occasionally, adding more water if necessary.
