Grasshopper Pie Cheesecake   (1 comment, 22 views) Wednesday, 21 November 2007
Cheesecake:

3/4 c Bisquick
3/4 c granulated sugar
1/4 c green creme de menthe (or if using plain, you can add green food coloring.)
3 eggs
16 oz softened cream cheese
1/4 c miniature chocolate chips.

Chocolate Ganache Topping
1/2 whipping cream
1 c miniature chocolate chips

Pre-heat oven to 350*. Spray a 9" glass pie pan with cooking spray

Beat all cheesecake ingredients (except chocolate) together with an electric mixer on high for two minutes, scraping sides of bowl frequently. fold in chocolate chips, pour into pie plate.

Bake about 35 minutes or until center is firm and puffed. Cool 45 minutes, cheesecake top will crack.

To make ganache:

heat ganache ingredients in a 1 quart saucepan over medium heat, stirring constantly until smooth. Remove from heat, carefully spread of cheesecake. Refrigerate at least 3 hours untill chilled. Store covered in refrigerator.
