This is always a hit with my family and my co-workers love it. Chicken Frito Pie 1 whole chicken 1 bag of Nacho Doritos 2 large cans of Old El Paso enchilada sauce 1 large can of cream of mushroom soup Boil chicken until it pulls apart from the bones easily and pull all the meat from the bones. In a large bowl mix the cream of mushroom soup, enchilada sauce until well blended together. Add doritos and mix again. Add chicken and mix thoroughly, then pour into a baking pan. It's a fall tradition for us every year to make a trip to Red River NM where they have a celebration called Aspencade. It's an arts and crafts fair held in conjunction with the turning of the aspens. It is so beautiful going up there because the mountain slops are all a deep gold and with the patches of other autumn colors mixed in, it is simply gorgeous.
