My DH just described our dinner as "Minn-Mex." Our usual tamale night (beef for him, chicken for me), beans of some sort (tonight it's a blend of half a can of refried black, half a can of smashed kidney, and about half a cup of leftover spanish rice), salad, enchilada sauce and cheese to top it all with. The "Minn" (Minnesota) part is his glorious pickled beets and onions. He used fresh beets this time instead of the cooked prepared ones from Trader Joe's. SO GOOD!!!!
