I just went to M's and got the 24 pack of Making Memories Sabrina papers for $8!!!! I've wanted them for a while and was waiting for them to go on sale. YAY!

today I am going to decorate MIL tree.. this year is gold and white.. with white lights!

shes been having a lot of knee pain lately so i thought i would do the decorating this year! ill try to get a picture of it when its done!

Cornish Hens for 2



Ingredients

* 1 large Spanish onion, sliced
* 2 Cornish hens
* Cornbread Stuffing, recipe follows
* Olive oil
* Kosher salt
* Freshly ground black pepper

Directions

Preheat the oven to 425 degrees F.

Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.

Pack the cavities of the hens with the cornbread stuffing.

Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.

Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.

Cornbread Stuffing:

*4 tablespoons unsalted butter
*1 cup yellow onion, chopped
* 2 1/2 cups cornbread
* 1 celery stalk, diced
* 1/4 cup chicken stock
* 2 tablespoons chopped flat-leaf parsley
* 1/2 teaspoon kosher salt
* 1/4 teaspoon freshly ground black pepper

Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.

Yields: 2 servings

Kelly that recipe sounds sooooo good! I love cooking Cornish hens...they look so cute when they come out of the oven!

Totally worth is though!



p.s. Orange glaze, pineapple, soy sauce & lemon are other things you can also be sure to try!

Served along with rice, yet even better!

In Southern Italy, they roast & sell them on the side of the road.

The local Americans call it 'Road-Kill Chicken'.

Comes with a side of fat fries along with vinegar.

It's really good Marci.

Similiar enough to chicken, but a bit different.

Makes for a great easy no-fuss meal for the holidays!

They're also good made with a wild rice stuffing...maybe I'll make some this weekend.

LOL! I think i saw something about some people actually eating road kill here now. It was on the news maybe?
Today my son is out donating plasma with his friends and i am baking a carrot cake from a box for his B-day.
Sure wanted one of those pink Slice machines, but they are all gone...anyone know what they sold for?

tonight I plan on doing a scrap page--since all this xmas talk I think I will make it xmas themed. I have a few pics out that were from last year. Gosh how time has flown. also going to go thru the xmas lights tonight you know which ones work what doesnt and then see if I can fix them this way tomorrow my older boys will hang them up for me.
