Chicken tacos.
An idea I saw on Pinterest - dump the chicken breasts in the crock pot with a packet of taco seasoning and a jar of salsa.
It smells good, so here's hoping it doesn't taste like dung. Need to run and buy the "fixings" for it.

The shredded chicken for the tacos was the bomb! Nice change of pace.
No idea what's on the menu for tonight.

Funny-I was just going to ask how the salsa chicken came out! Will have to try it.
Last night was eggplant parm, shpaghetti and bread.
Tonight is ... no clue.

Ooooh, eggplant sounds good.
The chicken really was quite tasty, Kim. The texture of the shredded chicken as opposed to ground meat really made it seem like we were eating something fancier than tacos.
I'll definitely do it again, I'm thinking with a salsa verde next time. Yum!

Nachos. Not the height of nutrition.
Lunch was turkey, bacon, avocado, red onion, tomato and sprout sandwich. Super good!
Oatmeal with raisins for breakfast.

I haven't had nachos in forever! Now I want some, fully loaded
DH is BBQing tonight - chicken breast for me (marinated with garlic, olive oil, s&p, dill, marjoram, lemon juice). Rib eye for him. He pre-BBQ'd some corn so it could cool down and I'm making a corn-tomato salad.
And our neighbor gave us a sugar pumpkin which I've never used before, I've always used canned, so I cooked, mashed and strained it earlier, made basically a pumpkin pie filling custard which is baking right now as individual puddings, and used about 1/4 of the mixture for muffins. Happy fall equinox!!

Tonight will be roasted chicken, mash potatoes, gravy, green beans, maybe noodles and rolls. And if I get up the umph, apple crisp for dessert!!
