Last night we had sweet Italian sausages, zucchini slices roasted with garlic, and leftover BBQ'd portobello mushrooms.

Not sure about tonight ... something from the freezer, probably - maybe turkey meatloaf and low-fat mac-and-cheese.

Coconut lentils with jasmine rice. Broccoli and yellow beans.

I made a vat of lentils and rice - will have more this week.

Jane, how do you make your coconut lentils?

We ended up having TJ's chili lime chicken burgers, with pepper jack and DH's special sauce (some combo of catsup, mayo, possibly relish, and who knows what else, lol), and a side of lettuce and tomato-corn salad (fresh San Marzanos which are yum right now!).

Tonight dh and dd will have hamburgers and I'll have chicken and dumplings!! Need to get those started!! Yummy.

Boiled red lentils with coconut milk, water, tumeric and garlic. I sauteed garlic in a bit of oil as a topper and sprinkled with chopped coriander.

the coconut lentils sound good!

been a bit behind and busy...lol, but i remember:

mon was hamburgers on honey wheat buns with baked beans on the side, tues was quiona, chick pea, and spinach stirfry, wed was catfish nuggets (baked for me, beer batter and fried for my honey) with honey cornbread, tonight will be shrimp for me and steak for him with corn on the cob, spinach, and garlic bread.

Jane, thanks for the link, I bookmarked it, the coconut lentils look really good.

We ordered pizza last night (tomato sauce, pesto sauce, pesto chicken, and spinach).

Tonight is eggplant parmesan from the freezer, and we've got a couple leftover Italian sausages to up the protein content.

The coconut lentils were tasty but after refrigeration, they need more water. They kind of sucked up all the liquid to the point where you could use it as a spread. Hmmm, now that is an idea.
