I have roast beef in the crock pot. I'll make some creamed squash and mash potatoes and gravy to go with it!!

Oh, this sounds good. How do you make the creamed squash? Our next crop of squash will be ready in about 3 weeks. However, I bought some at the store this am to have later this week.
Tonight we are having grilled beef fajitas, grilled onions and bell peppers, and guacamole.

I cube the squash (yellow crook-neck) and cook it till it's soft (with salt and pepper). Then drain almost all the water off....leaving just a bit in it. Then I add dry coffee creamer and stir it. It's how my mother has made for as long as I can remember!! (You can add butter if you want. I don't, but mother always does.) It's sooooo yummy!! Even my picky, picky dd and dh love it!!

We're just having instant food - Trader Joe's fresh chicken lasagna, we keep it in the freezer for times like this. We went to Six Flags today so we're really tired. Should be eating salad after the fried lunch we had, but I just don't have the energy!

Melissa, a trick for eating pasta, or at least spaghetti. Break your spaghetti into half or thirds. About halfway through cooking add broccoli slaw to the water to cook, drain and serve as you like. I like a half-and-half pasta/slaw combo, but sometimes I do 2/3 slaw + 1/3 pasta when I want even lower carb. I've done this with all kinds of sauces, and even made sauteed garlic noodles from the mix. I swear you'll hardly notice that you're eating more veg and fewer carbs!

I also love Dreamfields brand pasta. It's low carb but it doesn't taste any different than any other pasta.

We're having sort of a 'Tuesday special.' Leftover Indian, supplemented with additional palak paneer (instant food from TJ's, sadly we're out of paneer, I'd love more cheese  ), BBQ chicken from Sunday night, more shrimp added to the seafood curry, and I'm making more rice.

Tonight it was meatloaf, mashed cauliflower, and collards. Will take meatloaf sandwiches for lunch tomorrow.
My husband is trying to do the Paleo diet. I try to adhere as best I can but it's difficult.

I had to Google paneer...wasn't familiar with it. Aarti has a recipe on the Food Network. Sounds delicious!

Rhonda, paneer is really just a basic homemade cheese, like ricotta is. We're fortunate to have access to a large Indian culture and all their foods, and the local natural food store carries blocks of paneer. Like tofu it doesn't have much flavor of its own, and I basically use it like extra-firm tofu - add seasoning and cook. It's lovely fried in butter or olive oil or duck fat (what isn't, right?), and also great cubed and cooked in sauce.
The lack of cheese is the biggest problem with Paleo, IMO. The lack of coffee and a nice glass of Chardonnay are a close second. I think I'd do pretty well, otherwise.

Paleo is hard for me. No white potatoes, pasta, bread, rice...it is challenging to cook with much variety and without sacrificing taste. We don't do it 100%, thank goodness.
Tonight we went out to eat. We rarely go out to eat for dinner but there is a new little Korean restaurant in town and we wanted to try it. It was great. And, now, no dishes to do!

I found a really cool Paelo site a while ago. Didn't bookmark it but it had TON of recipes that looked really good.
Me, I'm a carb fiend. Could never ever go full Paleo.
