I'm having a TJ's frozen entree - chicken with gorgonzola sauce, haven't had it before. With some butter and garlic and parmesan cheese spaghetti. I try to have a good side of veggies with every meal, but had a lot of veggies for lunch and I'm feeling very Friday-lazy tonight
Well, I WAS going to have something healthy - leftover chicken breast, big salad, etc. But DH (who is still down south taking care of his mother) called and said his mom was wanting fish and chips. And since she does need to eat more right now, anything that's halfway healthy and stimulates her appetite is a good thing, so he went out for takeaway. Which put fish & chips in my head so I scrounged in the freezer and came up with breaded cod, and tater tots which I tossed with garlic, parsley, parmesan, pepper, olive oil and truffle oil (a Guy Fieri recipe mixed with a divine concept we got from a food truck a few days ago). I can't WAIT to eat this! I may delve into the cucumber-radish quick-pickle salad I made earlier and I may not.
Tonight will be smoked pork chops, scalloped potatoes and green beans with rolls!! Thinking of making blondies for dessert!!
I was looking for a certian recipe last night and couldnt find it on the net when dd said she thought my old write in recipe book was in the cupboard in the garage!! It was!!!!!!!! I was so excited to find it!! It had so many great recipes in it, plus the recipe for blondies that my grammy use to make. She had written down the recipe and sent it to me at least 15 or more years ago!! I am so excited!! Oh yeah....I'm scrapping that piece of paper!!
Tonight we're trying Chicken Cordon Blue!! Should be interesting. Not sure if we will have sweet potatoes or red skin potatoes with it, and corn. DD is trying to decide on a dessert too. Today is first day of spring break here and she's bored already!!
I've got a crockpot on for today - first time trying it set to a timer, hope it works! Onion, mushrooms, chicken breasts, a Campbell's sauce - Marsala, and whole garlic cloves. I'll probably make rice, and we'll have a salad.
