Sidenote - They also sell cactus in a jar (in the int'l foods/specialty aisle). It's usually called Nopalitos (Tender Cactus)....However, after growing up having it fresh, right from the source, the canned kind (which is usually sitting in a vinegar brine) just really can't compare to the original! ;)
