Great colour and texture..... sounds like a LO, lol. Yes, if the top of the bread stuck to your towel, that would cause the crust to break, release air bubbles, and collapse. I'm sure it is just as delicious anyway though. (You could try allowing your loaf to rise inside your oven, away from drafts, without covering the top.)
I used a recipe called Grandmas's Country White Bread. It doesn't look real pretty but is extremely tasty. I have at least three more recipes to try before I settle on one. I think the dough needed more flour becasue ti stuck to my towel when it was rising or could just be the recipe. The granddaghters are going crazy for it. Anyway when i took the towel off the bread fell a bit and I let it rise without the towel and then baked it hence the flat top.
