See, I am not the only one licking my monitor! If I told you once, I have told you a dozen times, "Where is my scratch-an-sniff monitor?" I would lick all of the lemon glaze off first then eat the rest!
My these look so tasty. Now I have to go wash my computer screen since I was licking on it!:))) My husband & I use to raise pigs & we would have a big pig roast every Labor Day weekend. We had 9 of them & our friends would plan that weekend to include the roast. Hope you had a grand ole time!:)
Family Pig Roast today! Press in pan crust, fresh berries & remainder of dough on top with a drizzle of lemon glaze. BLUEBERRY BARS: base ingredients: 1/2 cup white sugar &1/2 cup brown sugar 1 teaspoon baking powder 3 cups all-purpose flour 1/2 cup shortening & 1/2 cup butter 1 egg &1 Tbsp. water 1/4 teaspoon salt (optional) BERRY FILLING: 4 cups fresh blueberries 1/2 cup white sugar (slightly rounded) 4 teaspoons cornstarch (5 tsp if using frozen berries) DIRECTIONS: 1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9 x 13 inch pan. 2. In a medium bowl, stir together sugars, 3 cups flour, and baking powder. Mix in salt. Use a fork or pastry cutter to blend in the shortening & butter. Beat egg& water to stir in dough. Dough will be crumbly. Pat half of dough into the prepared pan, pressing firmly. 3. In another bowl, stir together the sugar and cornstarch. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer. 4. Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares. May need extra 5 min for frozen berries.
