NEVER GRATE LEMON for dessert again...see TIP! I made 2 changes: 1) I used vanilla cookies for crust (personal preference) 2) I used lemon pie filling instead of lemon curd. I put the hot pudding over warm cheesecake & immediately put on saran wrap to keep a film from forming on pie filling. Chilled over night Removed plastic wrap & served. If you love lemon you'll love this. TIP: No more grating lemon. Peel lemon with a potato peeler, (press lightly so you get only yellow not white underneath) put sugar for recipe in food processor, turn on toss in lemon peels & let run till you can't see peels just yellow sugar!
