Birthday with our coffee gang today. Crust: Melt 1/2 c. chocolate chips, 1/3 c melted butter, stir in 1 1/2 c. Quaker Oats (quick oats), 1/2 c.flour, 1/4 c. packed brown sugar. Press into 9" spring form pan, & up sides 1". Bake 350o 10 min. & cool to room temp. Filling: Beat well 2 - 8 oz. pkg. cream cheese at room temperature. Beat till creamy adding 2/3 c. sugar & 2 eggs, 1 tsp. vanilla, stir in 1/3 cup mini chocolate chips & pour over cooled crust. Combine 1/2 c. caramel sauce with 1 Tbsp. flour, mixing well. Spoon over batter & swirl in with knife. Bake 325o for 50 min. Topping: Mix 1 1/2 c. sour cream with 3 Tbsp. sugar, spread over hot cheese cake & return to oven for 6 min. turn off heat, open oven door completely, cool 30 min. Remove from oven, run knife along pan sides & cool completely. Best made day before. NOTE: For no cracking, place a 13 x 9 pan on lower shelf with water. It will heat while oven is getting to temperature.
