Well, I came along to thank you for your kindness on my latest cards, and look what I found! Yikes, It's 1:30am and now I'm thinking about coffee and apple cupcakes for breakfast.... You are multi-talented, lady! Thanks again for your kind comments on my cards, and thanks (I think) for the munchies!
My stomach is growling......just looking at them makes me hungry, now I have to go get a snack. Oh wait we have no sweets in the house, Yikes now I am having a sugar withdrawl
Make a yellow cake mix & add 1 tsp. cinnamon before baking (follow directions on box). Makes 24. When cool, cut a deep cone shape out of center of each cupcake. I cut the pointed end off just leaving a disk for top. Chop up 1 can apple pie filling & divide & fill holes. Cover with "disk." Beat 1 stick butter with scant 1/2 cup vegetable shortening, when whipped add gradually 4 cups powdered sugar & 1 tsp. vanilla extract. If necessary to thin add a tsp. or 2 of milk or cream. Put through pastry bag to decorate or just spread on cupcake. Refrigerate overnight & serve at room temperature.
