Shortbread Cookies
Cream well 1 pound of butter with 1 c. *very fine sugar. Add 5 c. flour, 1/2 tsp. each almond and vanilla extracts. Dough is very stiff. Work in an extra approximately 1 c. flour with your hands. You don't want the dough to be crumbly so you don't have to use the whole cup of flour if you don't need too.. Roll dough into small walnut size pieces and press firmly into small tart pans. Bake 350 7-12 min. till edges are barely brown on edges. Remove from pans after 1 min. and cool completely and store in tight covered tins to mellow for 10 days to 14 days without the frosting. Frost with a mixture of 1 Tablespoon butter, powder sugar, water 1/4 tsp each vanilla and almond extracts. Will store another couple of weeks done this way as there is no milk or eggs. These are melt in your mouth because they are all butter! While frosting is wet sprinkle with non peril candy.
*NOTE: I puree sugar in blender if very fine sugar is not available!
