Much Ado About Beignets

Hidden Journaling Reads: From the time we hit the road on the way to Disney World all Mickey talked about was Beignets. None of us had ever heard of them before, but Mickey assured us they were to-die-for. His first plan was to stop in Louisiana somewhere along the way. Surely there would be a roadside Beignet stand; after all, they were a Louisiana tradition.
Well the state of Louisiana came and went and no Beignets.
Mickey never gave up. Disney would have Beignets. Early one morning after we had arrived at Disney World, while we all were sleeping, he decided to search for these delectable pastries. The Port Orleans resort was rumored to have them so he got directions and set out. When he arrived, he asked someone where he could find Beignets. They said there was a bakery at the “old” Orleans resort. So, he set off on foot trekking his way across the resort grounds. When he realized that he could not get there from where he was, he hiked his way back to the car and drove to the “old” section of the resort. Almost an hour later he would finally have his Beignets. Eureka!
He bought a dozen of the delectable treats and carefully carted them back to the cabin. When he arrived, we gathered around to see these prized little pillows and there they were in their powdered white glory...Sopapillas! Yep they were nothing more than the sopapillas with powdered sugar; the Mexican treats we had come to love and enjoy from our days in El Paso. Needless to say, Mickey was a bit disappointed! His relentless search had landed him Sopapillas. So much for the Louisiana tradition.
