Hope to do this one next week. DD will be making her famous 7 layer bars this week and I will of course take photo's and scrap it the same as I have the last 13 years!! (yes she's been doing them since she was 1 and needed help....and now wants me no where around!! What happened to my baby?? I know....she turned into a bratty teenager!! I love her anyway!! )

Well, 7 layer bars starting from the bottom up is:
1 & 2. Grahm Cracker crumbs, 1/4 cup butter, melted mixed and pressed in the bottom of a 9x13.
3. 1 bag of coconut
4. 1 cup or so of Chocolate chips
5. 1 cup or so of butterscotch chips
6. 1 cup or so of walnuts
7. 1 can of sweetened condenced milk drizzled over the top. (this is what holds them together....the glue so to speak!!)
Bake at 350 until the coconut looks toasted.

I don't eat them since I don't care for coconut, but everyone else loves them!! I made mini books for everyone a couple years ago of DD making them with step by step instructions. They were a big hit!! And fun to do!!

These are sooooo good. I'm baking on Friday, and all next weekend. I'm making saltine toffee, aka Christmas Crack. I have photos of it but I need better ones.

Melody sweetie - doing okay - just still a little whoozy but not too badly - taking the day off again today just to rest. The dh has taken such good care of me.

Saltine Toffee

Makes: 36 pieces (which is a lie. It's more like 10 pieces.)

1 cup butter

35 saltine crackers

1 cup packed dark brown sugar

1 package (12 ounces) semi-sweet chocolate chips

1 cup chopped pecans, toasted

1 Organize: Line a 10-by-15-inch rimmed baking sheet with parchment paper, allowing for some overhang. Melt butter in a large saucepan. Brush parchment with a little butter. Line up crackers on buttered parchment, touching but not overlapping.

2 Thicken: Whisk brown sugar into remaining butter. Set over medium-high heat. Bring to a boil; boil thick, 2 minutes (or 248 degrees). Pour evenly over crackers.

3 Bake: Slide into a 400-degree oven and bake until brown and bubbly, 10 minutes. Carefully remove from oven.

4 Gild: Scatter molten surface with chocolate chips. Let melt, 5 minutes. Use an offset spatula to spread chocolate. Cast on nuts; gently press into chocolate. Freeze until firm, 30 minutes.

5 Cut: Lift parchment by its overhang, and set toffee (paper and all) on a cutting surface. Slice into 18 squares, then into 36 triangles.

MMmmmm....Love that stuff!! I haven't had it in years!! My family doesn't eat it and I certainly don't want to eat a whole pan of it alone!! So please eat a bite for me!!

I made cookies yesterday!! Every year my mother has a big ole Christmas party and has tons of cookies....she literally makes thousands of cookies!! But for the past 10 years or so, she's given me a list of cookies to make as well....along with some candies. This year I got brave and said I wouldn't do the 4 kinds of fudge, so she made them!! Yes!! So anywho...I made cookies:
M&M, Mexican Wedding Cakes, Butterscotch Pecan, Orange Dream, Coconut Macaroons, and Pretzel turtles. Today I'm doing Sugar Cookies, and Truffles: Oreo, Orange, and pumpkin. I love to eat the truffles, but really don't like having to dip them in chocolate!! Oh well, what has to be done, has to be done!! Oh, and dd is making her 7 layer bars tonight and we will make a few Mice Cookies as well when she gets out of school!!

Oh Tammy...Mexican Wedding Cakes are sooooo yummy!! A little dry so you must eat them with a cup of tea or coco...but mmmmmmmmmm one of my favorites!! They are just butter, flour, 10x sugar, vanilla and pecans. Rolled in a ball and baked and then rolled in 10x sugar....like little snowballs!! MMMMMMMMMMmmmmmmm...yeah....I really like them!!

A just in case you're interesed note:

When students return to Sandy Hook Elementary the National PTA is hoping their new school looks like a winter wonderland decorated with homemade snowflakes and you can help.
The PTA is asking for people to make snowflakes and send them by Jan. 12. Be as creative as possible, remembering that no two snowflakes are alike.
