A page for my heritage album. My mom's family owned lakefront property in southern Minnesota surrounded by what we later called "the woods". The woods was mainly sugaring maple trees. Every Spring they would drill a hole in some of the maple trees, tap in a spout with a mallet and hook a bucket over the spout to collect the dripping sap. Every day they collected the sap, poured it into a huge tub which was then boiled down. Maple sap contains about 97% water and it needs to be reduced to around 65-67% to become maple syrup. I remember going one day, tramping all over the woods collecting the sap with my cousins and siblings. We thought it was great fun.
