CRUST: 1 cup graham cracker crumbs, 1/2 cup quick-cooking oats, 6 tablespoons butter, melted. FILLING: 3 packages (8 ounces each) cream cheese, softened 1 14 oz. can sweetened condensed milk, 3 eggs, room temperature, 1 tsp. vanilla. 1 & 1/2 cup apple pie filling TOPPING: 3 tablespoon all-purpose flour, 3 tablespoon quick-cooking oats, 3 tablespoon brown sugar, 3/4 teaspoon ground cinnamon, 6 tablespoons butter, DIRECTIONS TOPPING: combine the flour, oats, brown sugar & cinnamon in a bowl. Cut in butter until crumbly, set aside. CRUST: In a small bowl, combine crust ingredients, cracker crumbs, oats & brown sugar; stir inmelted butter. Press onto the bottom of a 9-in. springform pan coated with cooking spray; Bake 350o 10 min. FILLING: Beat cream cheese until smooth than begin adding condensed milk. Add eggs & vanilla; beat on low speed just until combined. Pour over crust. Carefully arrange apple filling over cheescake filling. Bake at 350o for 15 minutes, reduce heat to 325o & bake 40 min. more. Remove from oven & put on crumble topping & return to bake for 15 more min. Turn off oven, cool in oven with door open for 15 min. Run knife around edges, Carefully to loosen; cool 1 hour longer with oven door open. Refrigerate overnight. Just before serving, remove sides of pan. Drizzle with caramel sauce. Refrigerate leftovers. Yield: serves 12
