This is like eating pumpkin pie within a cake. The dark spots are pockets of pumpkin. Because the lighting wasn't at the right angle, it looks quite dark, put it's pumpkin. It's really simple & delicious. Great "take along dessert!" RECIPE: Make a yellow cake mix following directions on box. Pour into a 13' x 9'' pan greased on bottom only. Set aside. Spoon over top of batter a 15-17 oz. can pumpkin pie filling (not pumpkin puree.) Over this pour 1/2 cup boiling water. Bake 350o for 30 to 33 min. Test in center with toothpick when cake begins to pull away from pan sides & edges start turning light brown. Cool, cover & store over night. Serve with whip topping or whipped cream. NOTE: I never purchase pie filling (it's never on sale) use 15-16 ounce can pumpkin puree. Add 1 egg, 1/2 cup packed brown sugar & 2 tsp pumpkin pie spice. 3 Tbsp. milk. Beat & use as pie filling!
