Ooooh - these look so light and airy! I bet they are yummy :) Question: is "icing sugar" the same as "confectioner's" or "powdered" sugar (white and powdery, rather like flour)?

1 cup butter (soft) 1/3 cup cream 2 cups flour Combine in large bowl, mix until well blended, cover and chill one hour. Turn onto floured surface, roll out 1/8" thick, cut into 1 1/2" rounds (I use a small spice-ball) Transfer to waxed paper which has been heavily sugared, Coat both sides.Prick with fork 3-4 times. Place on cookie sheet - bake 350' 7-9 minutes. (until wafers are slightly puffy but not brown) Remove and cool on wire rack. While wafers are cooling make the icing.
1/4 cup butter 3/4 cup icing sugar 1 egg yolk 1 tsp vanilla
spread icing on one and top with another.
Enjoy. (this is one of my favorite Christmas cookies. My Mom made them every year.) The other cookies on the extreme right hand side are shortbread, which are DH's favorite.
