Wow it must be hard for you to adjust - and change the entire family cooking to accommodate! I can sympathise - a friend was recently diagnosed with Diabetes type 1, out of nowhere - she is struggling through the adjustment process, and especially struggling with cooking with diabetes in mind. Hope your DH avoids the diagnosis altogether!
