What a terrifying experience. You wrote up what happened very clearly. I am so sorry this happened to you and so grateful your son was not more seriously injured.
I am not sure that I believe that an Embassy Suites would not have cameras. I would investigate that further. Even seedy hotels have cameras. If ES doesn't have cameras, I would ask why.
Please write a review of this ES hotel and put it on tripadvisor.com. That is the go-to site for many travelers and is a very trusted site for reviews. I would condense what you wrote here. The travel industry follows tripadvisor closely and you would get some attention there.
Continue to push and get this case out there. Even if you don't want money, you might consider talking to an attorney because that would get the hotel's attention.
