I have seen really nice ones done with a really nice christening gown stamp. I think they did gold accents on white paper.

Depends on how simple you want to go.

You could do a pretty elegant, simple one with the printing all on vellum, maybe a stamp or sticker, over some subtle pp attached with eyelets and ribbon at the top -- or better, delicate little white buttons.

Doing a two-layer card with no folds like that would go pretty fast if you have a lot of invites. Also, if you use an ink-jet printer, while it's still wet, pour embossing powder on and heat carefully (or it could warp the vellum, practice first on scrap).
