This is the very simple way I photograph my layouts with my Canon XTi. I do NOT use a flash. I prop it up next to a south facing window, usually in the mornings. I sit on the couch so I'm level with the layout and prop my arm so the camera is steady. I usually snap 3 to 5 photos of one layout so I can make sure I get a nice clear shot to choose from. I then use Picasa photo editing to crop around the edges and make any needed adustments. This way seems to work well for me every time unless it's a rainy day and not enough sunlight.
