I only started scrappin a year ago and I use 3 ring binders. This allows me to scrap out of order and also I can easily rearranged pages as need be. Finally, I can always go back and put my pages into themed albums as the need arises.
If you are a first time scrapper perhaps you should try scrapbooking some other photos before you begin on your wedding photos. That way, you'll have the basics and other techiques down before you try something as challenging as your wedding portraits.
My postbound books are by Pioneer, and I've had good luck so far. If you get 3-ring binders, make sure they're not for light use, because the rings will not close right after a while.
The classes are great because you can use their supplies and see what you like before sinking a ton of money in. Also, going to a 4-6 hour crop is great because you can borrow the expensive things like scissors and punches. I only have a few pairs of scissors and I don't have any punches, but someone else always has what you need, and I have things that others need.
Also, my scrapbook store has a "frequent scrapper" punch card that gives discounts. If your local scrapbook store has it, I recommend it.
I prefer the post bound albums because of the versatility they offer. I now use Close To My Heart albums and have been very happy with them. Of course, I'm a CTMH consultant so I enjoy being able to get the discounts available to consultants.
